Ingredients
- 1 cup rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 2 cups vegetable broth
- 1 cup frozen peas
- 1/2 cup cashews, chopped
- Salt and pepper to taste
Instructions
1. In a large skillet, sauté the onion and garlic until translucent. Add the rice and spices, stirring to coat the rice. 2. Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes. 3. Stir in the peas and cashews, cover, and cook for an additional 5 minutes. Season with salt and pepper to taste. 4. Remove from heat and let sit for a few minutes before fluffing with a fork. Serve hot.
