Ingredients

  • 2 cups basmati rice
  • 1 lb boneless chicken, cut into pieces
  • 1 onion, sliced
  • 1 tomato, diced
  • 1/2 cup plain yogurt
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp garam masala
  • 4 cups water
  • Salt to taste
  • 2 tbsp oil
  • Fresh cilantro leaves for garnish

Instructions

1. Rinse the basmati rice in cold water until the water runs clear. Soak the rice in cold water for 30 minutes. 2. In a large pot, heat the oil over medium heat. Add the cumin seeds and sauté until they start to splutter. Add the sliced onion and cook until golden brown. 3. Add the minced garlic and grated ginger, cook for another minute. Add the diced tomato, coriander powder, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft. 4. Add the boneless chicken pieces and cook until they are no longer pink. 5. Stir in the plain yogurt and garam masala. Add the soaked rice and water, stir well. Bring to a boil, then reduce heat to low, cover and cook for 20 minutes or until the rice is cooked through and the water is absorbed. 6. Fluff the rice with a fork and garnish with fresh cilantro leaves before serving.
