Feijoada
Ingredients
- 1 lb dried black beans
- 1 lb pork shoulder
- 1/2 lb bacon
- 1 lb smoked sausage
- 1 large onion
- 4 cloves garlic
- 2 bay leaves
- Salt and pepper to taste
Instructions
1. Soak the black beans in water overnight. 2. In a large pot, cook the pork shoulder, bacon, and sausage until browned. Remove meat and set aside. 3. In the same pot, sauté the onion and garlic until fragrant. 4. Add the soaked beans, bay leaves, and enough water to cover everything. Cook until beans are tender. 5. Add the cooked meats back in and season with salt and pepper. Simmer for another 30 minutes. 6. Serve hot with rice and orange slices.
