Orange Scented Onigiri

Ingredients
- 1 cup Uncooked Rice
- 4 cloves
- 3 Green Cardamom Pods
- 2 centimeters Long Cinnamon Stick
- 2 cloves Garlic
- 2 Shallots, thinly sliced
- 1/2 tablespoon Olive Oil
- 1/2 Rind of Mandarin Orange, thinly shred
- 1 teaspoon Chicken Stock Powder
- 100 milliliters Fresh Mandarin Orange Juice
- 1 cup Water
- 1 1/2 tablespoons Golden Raisin
- 1 1/2 tablespoons Almond Flakes, lightly toasted
- 1/2 tablespoon Sliced Spring Onion, optional
Instructions
Cook Japanese short-grain rice until sticky. Once cooled slightly, mix in a hint of orange zest. Shape the rice into triangles using wet hands. Optionally, fill with salmon or umeboshi. Wrap a strip of nori around the base and serve.
