Ingredients
- 4 cups water
- 2 stalks lemongrass, smashed
- 3-4 slices galangal
- 5 kaffir lime leaves
- 6-8 bird's eye chilies, smashed
- 200g shrimp, peeled and deveined
- 200g mushrooms, sliced
- 2 tomatoes, quartered
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon sugar
- 1 handful cilantro leaves
Instructions
1. In a pot, bring water to a boil and add lemongrass, galangal, kaffir lime leaves, and bird's eye chilies. Let simmer for 5-10 minutes.
2. Add shrimp, mushrooms, and tomatoes. Cook until shrimp is pink and cooked through.
3. Stir in fish sauce, lime juice, and sugar. Taste and adjust seasoning if necessary.
4. Remove from heat and garnish with cilantro leaves before serving.
