Ingredients
- 2 stalks lemongrass
- 5 kaffir lime leaves
- 3-4 slices of galangal
- 3-4 Thai bird's eye chilies
- 200g shrimp
- 200g mushrooms
- 1 tomato
- 2 shallots
- 1/4 cup fish sauce
- 1/4 cup lime juice
- 1 tbsp sugar
- 1/2 cup coconut milk
- 4 cups water
Instructions
1. Bruise lemongrass, kaffir lime leaves, and galangal.
2. Bring water to a boil and add lemongrass, kaffir lime leaves, galangal, and chilies.
3. Add shrimp, mushrooms, tomato, and shallots.
4. Season with fish sauce, lime juice, and sugar.
5. Add coconut milk and simmer until flavors meld.
6. Serve hot.
