Tamarind duck

Ingredients
- 1 whole duck, about 4-5 lbs
- 1 cup tamarind paste
- 1/2 cup soy sauce
- 1/4 cup honey
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2 tbsp vegetable oil
- Salt and pepper to taste
- 1/2 cup water
Instructions
1. Preheat the oven to 350°F.
2. In a small bowl, mix together tamarind paste, soy sauce, honey, garlic, ginger, salt, and pepper.
3. Rub the duck inside and out with the tamarind mixture.
4. Place the duck in a roasting pan and add water to the bottom of the pan.
5. Cover the duck with aluminum foil and roast for about 2 hours, basting occasionally with the pan juices.
6. Remove the foil and increase the oven temperature to 450°F. Roast for another 30 minutes or until the duck is browned and crispy.
7. Let the duck rest for 10 minutes before carving.
8. Serve with steamed rice or vegetables.
