Ingredients

  • 2 medium potatoes, boiled and mashed
  • 1 cup gram flour (besan)
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 inch ginger, grated
  • 2-3 green chilies, chopped
  • 1/4 cup chopped coriander leaves
  • Salt to taste
  • Oil for frying
  • 6 pav (dinner rolls)
  • Garlic chutney
  • Green chutney
  • Tamarind chutney
  • Fried green chilies (optional)
  • Fried green chilies (optional)

Instructions

1. In a bowl, mix together mashed potatoes, gram flour, turmeric powder, red chili powder, cumin seeds, mustard seeds, ginger, green chilies, coriander leaves, and salt. 2. Divide the mixture into equal parts and shape them into round patties. 3. Heat oil in a pan and fry the patties until golden brown and crispy. 4. Slit the pav (dinner rolls), spread garlic chutney on one side and green chutney on the other. 5. Place a vada (potato patty) between the pav. 6. Serve hot with tamarind chutney and fried green chilies.
