Aloo gobi

Ingredients
- 2 medium potatoes, peeled and diced
- 1 small cauliflower, cut into florets
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 cloves of garlic, minced
- 1 inch piece of ginger, grated
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish
Instructions
1. Heat oil in a pan and add the chopped onion, garlic, and ginger. Cook until onions are translucent.
2. Add the tomatoes, turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Cook until tomatoes are soft.
3. Add the diced potatoes and cauliflower florets. Mix well to coat them with the spices.
4. Cover and cook on low heat until the vegetables are tender, stirring occasionally.
5. Garnish with fresh coriander leaves before serving.
